Planning basics

Why roast weight matters

For per-pound chart rows, total oven time increases with roast weight because heat must reach the center of a larger mass. Tenderloin chart rows use total minutes instead because the published chart is written that way for those roasts.

Why oven temperature matters

FSIS recommends roasting meat and poultry at 325°F or higher. A lower oven temperature usually lengthens the cook; a higher temperature usually shortens it, though the relationship is approximate in home ovens.

Why resting is included

Resting lets juices redistribute and the center temperature continue rising slightly after the roast leaves the oven. Chart references also include a minimum rest period for whole-cut roasts.

What can change your results

Starting temperature, roast shape, bone-in vs boneless, pan type, convection setting, and opening the oven door can all shift real cook time away from a chart estimate.

FoodSafety.gov and FSIS emphasize using a food thermometer in the thickest part of the roast. The minutes shown here come from public roasting charts and are meal-planning ranges, not exact kitchen guarantees.

Chart oven temperature baseline

Each cut stores the oven temperature used in the FoodSafety.gov or FSIS chart row. If you choose a different oven temperature, the estimate adjusts proportionally and should still be treated as approximate.

Preference vs official reference

Doneness preferences for beef, lamb, and veal are shown as common final temperature planning ranges. They do not change the chart roasting time in this calculator. The official minimum internal temperature reference for whole roasts remains listed separately on the results panel.

Low-and-slow cuts

Chuck and brisket entries use extended planning ranges for oven low-and-slow cooking. Tender cuts such as rib roast use standard dry-roast chart rows.

Fully cooked USDA-inspected hams reheated in the oven use a 140°F reference. Preference ranges for beef doneness are separate planning references shown when applicable.

Does this calculator replace a meat thermometer?

No. This page is a planning tool only. Chart times help with meal scheduling, but a probe thermometer in the thickest part of the roast is the practical way to check doneness.

Why are chuck and brisket times longer?

Those cuts use a low-and-slow oven planning range because they are tougher muscles that usually need longer cooking than a rib or tenderloin roast. Smoked brisket follows different timing altogether.

Can I use this for turkey?

Yes. Select Turkey and choose whole unstuffed or breast. The poultry chart row uses about 13–17 minutes per pound at 325°F for whole unstuffed turkey, with a 165°F official reference endpoint.

How much rest time should I plan?

Chart references include at least 3 minutes for whole-cut roasts. This calculator also suggests a practical rest window of about 10–30 minutes depending on roast size so you can plan total meal timing.
